I don’t know why but I am always more motivated to make food early in the day. Around dinner time, I am useless. I think it’s for this reason that the crock pot cooking appeals to me so much! This morning I put dinner in the pot and made two days worth of lunches. I am kicking some Monday butt! I am making a recipe from one of those small paper back cookbooks sold at grocery check outs. It’s called taco chicken and it has the seal of my-picky-eaters-approval. The recipe is as easy as it gets.
1 lb frozen chicken (I buy a bag of boneless skinless chicken breasts)
1 envelope of taco seasoning
1 can of diced tomato with green chilies added (they sell it like this!)
That’s it. Mix up the taco powder with the tomato’s, pour it over the chicken, set on low for 6-8 hours. I shred the chicken once it’s done and use it for burrito filling on tortillas.
This lunch has nutella/peanut butter sandwiches. Part of my bribe to get her to the YMCA tomorrow. My 3 month hiatus is over and since I was charged for this month I better get some miles on the elliptical out of it!
