Trader Joe’s to the rescue again! I took the red curry simmer sauce for a test drive and LOVED it. Ara loved it too, even though it had a bite of spicy to it. I used frozen chicken breasts so this was as easy as it gets! The rice is brown basmati mixed with red quinoa, topped with steamed asparagus. I wrapped my box in plastic wrap, I hope this sauce doesn’t break through and stain it! The small layer has greek yogurt and orange slices, yum.
